Easy Date Balls

The perfect hiking snack or between-meal treat.

INGREDIENTS
12 large fresh seeded dates- or 1 cup of seeded dry dates

1 tablespoon chia seeds (optional)

1 cup almond meal

1/2 cup shredded or desiccated coconut, plus 1/3 cup extra for rolling

1/3 cup coconut oil

1 tablespoon cacao powder

METHOD

Place dates and chia seeds in a bowl and cover with hot water. Stand for 1 hour. Drain.

Process dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds until mixture comes together.

Place remaining coconut in a shallow dish.

Roll level tablespoons of mixture into balls.

Roll in coconut to coat.
