Smoked Salmon Quiche

If you are looking for a quick, tasty no-fuss lunch, snack or dinner- this delicious quiche is the answer! An Easter recipe perfect for Good Friday.

Ingredients

1 onion* finely chopped

3 eggs

1/4 cup butter melted

1 cup cheese grated

1 cup milk

1/2 cup self-raising flour

1 tomato

200 g smoked salmon

1/2 cup parsley chopped

Method

Add to the food processor the eggs, cheese, milk, salt and pepper, mix together.

Pour in melted butter and flour and mix. Add the onion. Pour mixture into greased flan dish.

Break salmon into pieces, place evenly in the mixture.

Top with parsley and tomato slices.

Bake at 180C for 1 hour.

EQUIPMENT

1 food processor

*you may find the onion flavour a little too strong- you can omit it- or substitute with cooked leek or chopped chives.
