Diamonds Favourite Rocky Road - 3 Recipes

Diamonds normally are out hiking on the ‘Rocky Road” but with Easter around the corner...so why not treat yourself, friends, and family to some AMAZING homemade edible “Rocky Road”.

Traditional Rocky Road

·       750 g good quality Milk Chocolate

·       ½ Cup Shredded or Desiccated Coconut

·       1 ½ Cup Macadamia nuts, halved

·       100 g pink & white mini-Marshmallows

·       3 bars of Cadbury Fry’s Turkish Delight- chopped

OR

Superfoods Rocky Road

·       1 ½ cups roasted nuts (maybe almonds, macadamias, pistachios)

·       1 ½ Cups mixed dried berries (maybe blackberries, goji berries, cranberries, chopped dates, cherries, glaced ginger)

·       ½ cup mixed seeds (sunflower, pepitas)

·       ½ cup toasted coconut flakes

·       500g Dark Chocolate

·       1 Tsp coconut oil            

·       Pinch of Sea salt

NB Reserve some of the nut and berries mixture to sprinkle on top before it goes in the fridge.

OR

Clare’s Special Rocky Road.

·       400 g milk chocolate

·       400 g dark chocolate

·       2 cups mini pretzels chopped

·       2 cups liquorice chopped

·       2 cups iced gingerbread biscuits (Pfeffernusse 200g pkt)- chopped (plus 1 cup extra for topping)

NB Reserve a cup of crumbled biscuits to sprinkle on top before it goes into the fridge.


Method for all three.

Grease a 3cm deep, 15.5cm x 25cm (base) slab pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.

In a large microwave proof bowl break up the chocolate pieces (with coconut oil and salt for superfoods recipe) and microwave in 30 second bursts. Stirring in between until the chocolate has fully melted.

Pour into a bowl and stir through remaining ingredients. Push down the mix firmly the pan and refrigerate.

Once set, chop into slices or small squares and devour!! Ingredients

Refrigerate 30 mins or until set
