Korean Chicken Tacos

Experiment with this easy recipe on your next camping adventure.

Enjoy it around the campfire with friends.

Ingredients

·       1 Red Onion- thinly sliced

·       2 carrots- grated

·       Small cos lettuce- shredded

·       3-4 chicken breasts cut into strips

·       12 Mini flour tortillas

·       1 lemon

·       ½ cup white or rice wine vinegar

·       Water

·       Sugar

·       Salt

·       Mixture of 2 tbs honey, ¼ cup soy sauce, 2 tsp minced garlic

·       Garlic aioli with a squeeze of lemon

·       Olive oil

·       Crispy shallots

 

Method

·       Combine onion, vinegar, and a large pinch of sugar and salt in a small bowl. Cover with water and set aside- and then drain just before use.

·       In another bowl combine lettuce and carrot- with a squeeze of lemon juice- set aside

·       Fry up the chicken strips for 2-3 minutes then add the mixture of garlic, honey, and soy sauce to coat the chicken.

·       Microwave the tortillas to warm through.

·       Construct your individual tortillas of chicken, salad mixture, pickled onion, top with crispy shallots and garlic aioli.
