Hiking Lunch Ideas - Food for energy and taste!

Wraps are a favourite when it comes to hiking lunches. To spice up your average meat and salad wrap, try our favourite Roast Vegi Wrap - the extra preparation the night before will be worth it after a hard morning on the trails.

Diamonds FAVOURITE! - Roasted Veggies Wrap

1.      Preheat your oven to 375 degrees

2.      Line a large baking tray or two with baking paper

3.      Slice into strips your favourite veggies- I love to use red capsicum, portabella mushrooms, zucchini, sweet potato, and eggplant

4.      Toss all the veg in olive oil and a sprinkle of balsamic vinegar

5.      Spread out on the trays and roast for about 20-30 minutes- until they are tender and slightly caramelised

6.      Cool to room temperature

7.      Grab your large tortilla wrap, spread with hummus add your roasted veg with a sprinkle of crumbled feta and fresh baby spinach.

8.      Wrap and devour!!
