Protein Brekky Muffin-to-GO!

Grab and Go Breakfast Muffin

This is a perfect on-the-go filling breakfast or snack. Perfect for muscle recovery after a hard hiking training. Each muffin is packed with 11 grams of protein and less than 1 gram of carbs. They will keep for a couple of days in the fridge- or frozen for when needed. This makes 12- but you can easily halve it.

What you will need

110 g cream cheese

8 eggs

60 g almond meal

1.5 tsp baking powder

100 g grated cheddar cheese

100 diced ham

100g frozen spinach (thawed and all the excess liquid squeezed out)

12-hole muffin tray

How to make them

Preheat the oven to 180 C and grease and flour your muffin tray- or use paper cases

Beat together the eggs, cream cheese, almond meal and baking powder until smooth

Stir in the remaining ingredients with some salt and pepper

Spoon into the muffin tray and bake for 15 mins.
