BLUEBERRY AND CORN SALAD
Blueberry season is here!
Enjoy these sweet, nutritious berries with a fresh new salad, perfect for your next hike or post-adventure snack. Perfect with grilled salmon.
Ingredients ( serves 4)
3 ears of corn- blanched or char-grilled for extra flavour
250g fresh blueberries (1 cup)
1 medium cucumber, washed and sliced
½ small red onion, finely chopped (optional)
¼ cup chopped coriander
For the dressing:
1 tbs fresh lime juice
1 tbs extra virgin olive oil
½ tbs honey
¼ tsp ground cumin
salt and black pepper to taste
To assemble
Mix the dressing ingredients.
Cut the kernels off the corn cobs- and mix them with the other ingredients.
Toss everything together with the dressing.
