Watermelon Salad

Refreshing Mediterranean salad ...perfect for these hot summer days. Take a serving of this on your next hike - but remember to add an ice brick to keep it cool.

Toss together 

·       Half of a largish watermelon- cubed

·       2-3 Lebanese cucumber - cubed

·       About 15 mint leaves and 15 fresh basil leaves- roughly chopped

Add the dressing now- mix through then add

·       250g block of creamy feta- crumbled

Honey Lime Dressing- whisk together

2 tbsp honey, juice of 1 lime and 2 tbsp of extra virgin olive oil, pinch of sea salt
