Banana Bread Cookies
A heathy treat to pack on your next hiking adventure...enjoy for breakfast, as a snack or dessert.
What you’ll need…
· 4 Ripe bananas
· 2 ¾ (280g) cup rolled oats
· 1 cup (256g) smooth or crunchy peanut butter
· 1/3 (60g) cup dark choc chips
· ½ tsp cinnamon
How to make them…
· Preheat oven to 180C
· Line tray with baking paper
· Mash the bananas in a medium bowl with a whisk
· Whisk in the cinnamon and peanut butter
· Fold in oats and choc chips
· Scoop onto a lined baking tray and bake for 15 mins
· Let stand for 5 mins then completely cool on a wire rack
Makes about 18 (but can be easily halved)
For storage place in a sealed container and keep in the fridge,.
