Tarkine Bean Salad

This was enjoyed by us while overlooking the Arthur River and served with baked salmon!

Ingredients

·       750g Green beans

·       120g Slivered almonds

·       Olive oil

·       Maple syrup

·       Chilli powder

·       Smoky paprika

·       Curry powder

·       Cumin

·       Salt

·       200g Fetta

·       1 punnet Cherry tomatoes

·       250g baby beets- diced

·       Balsamic glaze dressing

Method

Step 1: Top & tail beans, cut in half and place in a pot with water – bring to the boil and remove (we want crunchy beans) Cool.

Step 2: In a pan, heat up oil then add slivered almonds & a good spoonful of maple syrup. Add in pinches (around ¼ tspn) of chilli powder, smoky paprika, curry powder, cumin and salt to taste. Continue to stir through the whole process. Remove from heat and cool on some greaseproof paper- when cool crumble up.

Step 3: Mix beans, candied almonds, halved cherry tom’s, diced baby beets and dressing and top with crumbled fettaa bag of fresh rocket
