Christmas Spinach and Cheese Pie
The perfect addition to your 2020 Christmas lunch or party!
Ingredients
1 brown onion
2-3 cloves of garlic
70g pine nuts
250g feta cheese, crumbled
1 cup cheddar cheese, grated
1/4 cup parmesan cheese, grated
5 eggs, salt, pepper, 1 tsp fresh oregano, nutmeg
500grams frozen spinach
2-3 sheets puff pastry
Method
Preheat the oven to 375 degrees. Dice the onion into small pieces and mince the garlic. Cook both in a small frying pan with 1 tablespoon of olive oil over medium heat until soft and transparent. Toast pine nuts
In a bowl combine feta cheese, parmesan cheese, cheddar cheese, eggs, salt, pepper, oregano and nutmeg. Add thawed spinach, strain it first in a colander and press out as much moisture as possible. Add onion, garlic and pine nuts to the cheese/egg/spinach mixture. Stir until well combined.
Grease pie dish and line with puff pastry. Spread the spinach filling evenly inside the pastry lined pie dish. Fold the corners of the pastry back and top with remaining pastry. Brush a whisked egg over the top (this will give the surface a glossy appearance after cooking).Bake the pie for about 30 minutes until golden brown. Allow the pie to rest for about 5 minutes before cutting to allow the filling to set.
