Jo's super-moist Carrot Cake
Jo’s family recipe is a Diamond favourite - enjoyed after training or with a cuppa on a hike.
INGREDIENTS
1 1/2 cups finely grated carrot
1/2 cup castor sugar
1/2 cup raw sugar
1 cup plain wholemeal flour
1 tsp bicarb soda
1 tsp grated whole nutmeg
1/2 cup vegetable oil
2 eggs
1 banana mashed
METHOD
Mix the dry ingredients. Mix the carrot, oil, eggs and banana. Combine. and mix well.
Cook for approx. 1 hour at 150 degrees (no fan)
ICING
1 cup icing sugar
100g cream cheese, softened
45g unsalted butter, softened
1tsp lemon juice
1 lemon, zest, finely grated
Blend in a food processor until smooth, ice cake and sprinkle with crushed walnuts and lemon zest.
