Festive Whole Roasted Cauliflower

Add a little cheer to your Christmas in July celebrations.

Method:

  • Preheat oven to 200C

  • Boil a medium-sized cauliflower (leaves removed and stalk trimmed) in salted water for about 3 mins then left to steam dry for 5-10 mins

  • Combine 3 tbsp olive oil, 2 tsp garlic granules, 2 tsp mixed herds, 2 tsp sweet smoked paprika and a pinch of salt and pepper

  • Place cauliflower in a deep roasting pan and brush all over with the following with oil mixture

  • Roast for 20 mins.

  • Baste with any oil from the pan and roast for another 20-30 mins- until it’s golden and a little crisp in places.

Sauce

  • Whilst it’s cooking, combine 6 tbsp. of natural yogurt with the juice of ½ lemon, remove seeds from a pomegranate and pull the leaves from some parsley

  • Remove cauliflower from the oven and drizzle with yogurt mixture and garnish the pomegranate seeds and parsley leaves.

Cut into wedges and enjoy!!
